Wine pairings are most of us nervous because I think, but wait, someone just launched a line (or should I say corkscrew!) In the mix!
Many wineries are, in fact, almost 90% of them located in New Zealand by the famous cork dipped our favorite beverage and have turned instead to "screw" peaks. Holy Cow! What's happening? In the past, only the really super frugal (cheap) wine in sealed ..... And we all know, have givenus headaches in the morning!

Statistics show that between 2% and 8% of wines are sealed with a cork that delightful moldy, wet cardboard, the kind like the taste and smell? The cause of cork taint is a mystery and should be harmless, but who wants to drink it? Also, what foods do you "pair" with? I do not think you'll find in any wine food pairing tips chartthat!

The screw caps of today are very well designed pieces of metal rather than the wine seems to get the job. Basically, you want the wine in the bottle remains sealed and in the air, so that no oxidation occurs. We Americans just need to screw our prejudices "about themselves."
